YELLOW OYSTER MUSHROOMS

Yellow oyster mushrooms are small to medium sized with caps averaging 2-6 inches in diameter and attached to a short or nonexistent stem. The thin, dry, smooth caps are daffodil yellow, semicircular, and look like small petals grouped and layered in a small bouquet. When young, the caps are flat, but as they get older they begin to curl and become convex with wavy edges. Under the hats are many soft, short, white gills connected to an ivory white, small stipe. Yellow oyster mushrooms have a fruity aroma reminiscent of an aged red wine and are velvety soft, crunchy and chewable. Raw, yellow oyster mushrooms can be slightly bitter, but after cooking they develop a balanced, nutty flavor that resembles the flavor of cashews.

PREPARATION

Yellow oyster mushrooms are best suited for cooked applications such as stir-frying, braising, boiling or sautéing. Before cooking, the mushrooms should be gently cleaned with a brush or damp towel, and the stalks can be quite bitter for some people, in which case they should be removed and discarded. It is also important to remember that the mushrooms take longer to cook because they retain water and the water takes time to finish cooking. Yellow oyster mushrooms can be sliced and cooked in soups, mixed into sauces, fried and served over steak, made into omelets, sprinkled over pizza, or cooked and served on toast. Yellow oyster mushrooms go well with poultry, seafood, steak, coriander, thyme, parsley, rosemary, tarragon, garlic, garlic bark, onion, leek, fennel, arugula, turnip, asparagus, bokchoy, potatoes, lemon, brie, pine nuts, coconut milk , rice, noodles, quinoa, or barley. Certain protein polysaccharides in the oyster mushroom have been shown in experimental animal studies to have anti-hyperglycemic, anti-soft tissue tumor, immunomodulatory, anti-inflammatory and anti-hypertensive activity. In Traditional Chinese Medicine (TCM), the oyster mushroom is known to expel cold wind and relax tendons and bones.
